When our team members first began mixing their chicory with cocoa, it was out of pure curiosity β what would it taste like? What we found was a uniquely full bodied, deliciously complimentary flavour profile, and a beverage we could all enjoy as a cosy daily ritual with no discernible downsides.

We already knew a lot about chicory, but when we started looking at the history and traditional uses of cocoa, we found remarkable parallels with chicory. Most of the effects once attributed to these plant foods have also been independently verified by scientific studies, which have also expanded the picture by revealing ways that combining them may unlock powerful synergistic effects.
The inulin in chicory is renowned for its capacity to feed beneficial gut bacteria, so much so that it is used in infant formulas to address gut issues in children who werenβt breast fed. Similarly, research suggests the polyphenols in cocoa can shift the gut microbiome toward a less inflammatory profile.
From the perspective of mood and energy levels, the benefits of dark chocolate need little introduction. Chicory, on the other hand, has been found to enhance sleep and even help the body heal from chronic sleep deprivation. This will sound good to anyone struggling to make it through a stressful week at work. The inulin in chicory also enhances absorption of minerals from other foods, meaning that it can make the sleep-enhancing, stress-reducing magnesium present in cocoa more bioavailable.
